For a treat – why not try a delicious White Chocolate Tart … here is a recipe from the Barge Apres Tout – Caroline has been back in her kitchen – preparing gourmet delights for passengers who will be cruising on the beautiful rivers and canals of France.

Ingredients

Sweet Pastry lined into a case and precooked

400 mls heavy cream
250 g white chocolate
5 egg yolks
1 tbsp sugar

Method

Dissolve the white chocolate in the cream – whisk the egg yolks and sugar until thickened and then whisk in the warm chocolate mixture. Strain and pour into the pre baked pastry case. Cook for 1 hour at the low until just set. Leave to set for at least 3 hours.
