4 ripe pears
1 cup sugar
1 pint water
2 egg whites
1/4 cup melted butter
1/4 cup flour
1/4 cup sugar
Peel pears, dissolve sugar in water – add the pears and vanilla – simmer gently until cooked through for approx 1 hour.
For the tuiles – mix all ingredients to smooth paste. Spoon circles onto baking parchment and cook in medium oven – 375° – for approx 10 minutes until browned. Leave to cool for a minute or two and then mould over a ramekin or small cup.
To serve – slice pear – fill the tile with ice-cream or sorbet and drizzle a fruit coulis.
