1 vanilla pod
½ pt cream
2 oz sugar
1 leaf gelatin
Red berry coulis and red fruits, such as strawberry, raspberry, blue berry


Heat half of the cream with the vanilla pod and sugar – infuse for 10 minutes.

Soak the gelatin and add to the hot liquid.

Allow to cool.

Whip the rest of the cream lightly and then strain the liquid on to the cream and fold in.

Pour into moulds and leave to set.

Serve with the fruit coulis and berries.
