Cheese Roulade filled with shrimp and dill

Ingredients

2 oz Butter
2 oz plain flour
4 eggs
½ pt milk
1 tbsp mustard
4 oz Cheddar cheese
1 pack cream cheese
shrimps
dill
salt & pepper

Method

Melt the butter in a pan, add the flour and stir in the milk and allow to cook for 2 minutes.


Stir in the egg yolks, mustard, salt and pepper and cheese.


Whisk the egg whites to soft peaks and then fold in.


Pour into a lined jelly roll tin and bake at 400˚F for 15 minutes.


Once cool – roll up with cream cheese, shrimps and dill.
